The Granita is likely the oldest ice dessert in existence. Similar to the original and well-known sorbet, it is typically made from the juice of tart fruits, wine or champagne, and a bit of sugar. Due to its low sugar content, the desired ice crystals form during freezing. A granita should resemble crushed ice, though the texture should not be too fine.
For the winter version, you will need:

80 g powdered sugar

Juice of two oranges

150 ml dry white wine

600 ml champagne
For decoration:

3 oranges

Fresh mint leaves

Preparation:

Reduce the orange juice in a pot to about 3/4 of its original volume.

Meanwhile, mix the powdered sugar and white wine well in a shallow dish. Add the reduced orange juice.

Pour in the champagne and place the mixture in the freezer.

The freezing time is about 3 hours, depending on the size of the dish used.

While the mixture is freezing, prepare the decoration: squeeze two oranges and chill the juice. Peel one orange and cut it into small cubes. Keep chilled.

Once the granita is frozen, scrape it with a tablespoon and fill it into the pre-chilled glasses.

Pour a little orange juice over the ice, decorate with orange cubes and mint leaves, and serve to your guests.
