CHAMPAGNER-POPSICLES – EIS AM STIEL

The warm summer days are upon us, and to help you fully enjoy the best time of the year, we’re sharing this glamorous summer trend: Champagne Popsicles – ice-cold champagne with fresh fruit on a stick. Here’s how you can easily make this luxurious treat at home.

Ingredients for 8 servings:

  • 400 ml champagne

  • 20 ml goji berry liqueur

  • 20 ml Cointreau (liqueur)

  • 150 g mixed berries

  • 1 tbsp goji berries

  • 16 small mint leaves

  • Crushed ice

  • Extra berries and mint leaves for garnish

  • Ice pop molds with 8 cavities

  • 8 wooden ice sticks

One advantage of making them yourself: You can fill the champagne popsicles with all your favorite fruits – strawberries, blueberries, raspberries, peaches, blackberries, and more.

Tip: For a perfect summer vibe, use a sparkling, fruity rosé champagne with the flavor of ripe berries.

Step 1:

Pour some boiling water over the goji berries and let them soak for about 5 minutes, then drain. Fill the ice molds with a mixture of berries, goji berries, and mint leaves.

Step 2:

Pour the (rosé) champagne, goji berry liqueur, and Cointreau into a large jug and stir well. Pour the mixture into the ice molds.

Step 3:

Close the molds and insert the ice sticks. Place them in the freezer overnight, or until completely frozen.

Step 4:

Run some warm water over the molds to make it easier to remove the popsicles. Serve the “cocktails on a stick” on a large tray with crushed ice, and garnish with mint leaves and berries – done!
